Healthy, cheap, simple dinner ideas?

I'm trying to come up with meal ideas with cheap ingredients, that taste good and are (really) easy to make- I'm not the best cook :/
Any suggestions?

    I like the "put anything you've got into it" type of recipes.

    For example: Pasta. Boil your pasta. Saute garlic in EVOO. Some salt. Then "put anything you've got into it": fresh cut basil; steamed broccoli; diced carrots and peas; diced asparagus or green beans; diced mushrooms; cut up fresh tomatoes or sundried tomatoes; diced turkey sausage; cubed eggplant; a bit of grated cheese; etc. I prefer fresh veggies, but you can use canned stuff, just as long as you watch the salt content. You can also use frozen veggies, but they won't be as crisp.

    Same goes with Gumbo. Saute diced celery, onion, and bell peppers in butter. Add some broth and roux (flour to thicken). Then "put anything you've got into it": okra, seafood, and meat are the staple, but add your favorite veggies to make it your own.

    You can sautee almost any veggies with almost any other veggie add your favorite cheese and whatever meat you have laying around. I'm queen of doing that. LOL

    Or roast them.. my favorite roasted veggies are brussel sprouts with beets carrots and garlic. just drizzle in a little olive oil and sprinkle on some pepper (and salt if you like it) mmm so yummy
