Gluten Intolerance?

Hi everyone!
I have been thinking I may have a gluten intolerance. I bloat very easily. So I decided to cut back on gluten, having about one serving a day (or two) and the bloating is going down significantly. Less gas, etc.
My question is... how can I tell if I am gluten intolerant? How many days should I test without gluten to see?

They say to cut it out of your diet completely for one to two months and see how you feel when you start adding it back in after being off for a long while. What I noticed after a month without gluten is that my carb craving is pretty much gone. I like carbs, but no more than any other macro.0
