Meatless, 500 Calorie Dinner
:flowerforyou: Please! Recipes! The cheaper to make the better..
Also.. smaller quick meals for just me! I am not good in the kitchen at all -_-
I just need some ideas because some nights the family cooks and I have to eat what they pick, sometimes I am able to adjust it to make my own thing.. sometimes I'm on my own! Any interesting cheap recipes or ideas would be helpful!

Grill some chicken breast, nuke a small sweet potatoe, cover with green veggies , like greenbeans can cook this in less than 5 minutes0

If it was me......
I would probably have a mexican themed burrito or Nachos.. YUM!
Using Black beans, a tortilla, greek yoghurt, salsa, avocado, lots of cheese! Tomato!0 -
puree 15 oz container of extra firm tofu with 3 Tablespoons pesto sauce, some onion, and pipe/spoon it into jumbo pasta shells. make a simple spaghetti sauce, or grab a jar of your fav and pour it over. top with some parmesan/ramano cheeses and cover. bake until the shells are done.
6 servings, i think it comes out to about 390 calories0 -
Today for lunch I sauteed a cup of Boca crumbles in cooking spray with some garlic, onion, and bell pepper. Added a handful of baby spinach and a cup of cooked rice. Easy, quick, and about 400 calories.0

Meatless..
Its more of a Breki for me, but i love Eggs topped with cooked Tomato, Mushrooms, and Capsicum covered in a few herbs.

Mexican meals are super easy to do meatless. Make some burritos, burrito size tortilla, stuff with some beans of your choice (whole or mashed) throw in some veggies like bell peppers and onions (cooked on a skillet) and cheese if you like. Bake for 10mins at 425 and you have some yummy burritos, add a small portion of mexican rice or some avocado slices on the side.0
