cant think of any for breakfast really, except making your own baked beans!0

don't laugh but one of my favourite breakfasts is a quesadilla.. made with kidney beans instead of meat!! You just mash up well with a fork about a 1/4 or 1/3 of a cup of kidney beans, add your fav healthy salsa and mix.. spread onto one half of a healthy choice tortilla (i use smart sense ones) and sprinkle chopped green onions and some low fat or full fat cheese (whatever you use and it doesnt take much). Fold the tortilla and either nuke for 30 seconds til it warms thru, or brown in a non stick pan on both sides for 2-3 min if you prefer it crispy; top with more salsa and sour cream if you want or whatever your dietary needs are, or just eat as it.. they are fabulous and no they dont taste like mashed kidney beans lol They taste just like regular quesadillas..
I actually will sometimes make them the night before and take to work for breakfast.. a quick nuke, easy to eat at your desk and warm and yummy and healthy... also makes a great lunch with a salad LOL...0 -
See if your library has a cookbook called Spilling The Beans by Julie Van Rosendaal and Sue Duncan.
They've incorporated beans into every meal and some desserts. The few recipes I've tried from this book are delicious and they are simple to make.0 -
