I made this no lettuce salad and it turned out super yummy. I thought I would share!

1/2 can of canned tiny shrimp
1 oz of feta cheese, crumbled
3/8 Avocado, diced
1 tsp olive oil
4 black olives
1/4 cup parsley, chopped fine
3 slices tomato, diced
6 slices cucumber, diced
1 oz lemon juice
Black Pepper
Greek Seasoning

I put the lemon juice over the avocado before adding it to the salad to keep it from turning brown so I could fix it this morning and eat it later. Very good !!

Sounds delicious- I love anything with feta. I even add it to my tomato soup. Had no idea I could buy canned shrimp.

^This-- OP, what brand do you use for the shrimp? Is it found in most grocery stores or is it more of a specialty item? I've never seen them before but would love to try them for this, it sounds scrumptious.

Bumble Bee Seafoods - Premium Select Tiny Shrimp. I found it near the tuna fish and sardines. I used half of the can today and can use the other half later. They actually taste pretty good.

Sounds good! I usually have frozen salad shrimp on hand, so I'll use those instead :)
