I paired this sandwich with my Loaded Mashed Potato Cakes found here: http://www.myfitnesspal.com/topics/show/925744-loaded-mashed-potato-cakes. It was so delicious and tasted like a sandwich from a diner.
Turkey, Bacon, and Swiss Melt
2 slices low calorie bread (Village Hearth light Italian 40 calories per slice)
1 serving Turkey breast lunchmeat (I planned on turkey, but only had chicken in the house. It was 50 calories)
2 slices of bacon (same as used in the potatoes)
2 slices thin swiss cheese (40 cals per slice)
slivered onions
¼ tbsp light butter
Fresh mushrooms
½ tbsp Olive oil
Crisp the already cooked bacon in a pan. Keep the grease in the pan and add the onions. Once caramelized texture, remove and set aside. Add the butter and mushrooms and sautee.
To construct the sandwich:
Use a basting brush and put a thin layer of olive oil one side of each slice of bread. Layer as follows:
1. Bread (olive oil side down)
2. Turkey
3. Bacon
4. 1 slice swiss cheese
5. Mushrooms and onions
6. 1 slice swiss cheese
7. Bread (olive oil side up)
Grill the sandwich on medium heat until both sides are golden brown. Be sure to watch them carefully as they could burn easily with the low amount of oil on the bread.
Sandwich is a total of 350 calories.
