Loaded Mashed Potato Cakes

For those leftover mashed potatoes! I paired this with the Turkey, Bacon, and Swiss Melt found here: http://www.myfitnesspal.com/topics/show/925740-turkey-bacon-and-swiss-melt?page=1
2 cups mashed potatoes (made very dry, I only used a very little bit of milk in them)
1 egg white
1/3 cup shredded cheese (weight watchers brand Mexican shredded)
1/8 cup to 1/4 cup chopped green onions (give or take depending how many onions you prefer)
2 or 3 slices chopped bacon (I used precooked bacon at 90 calories for 4 slices)
Paprika (to taste)
Garlic powder (to taste)
Salt (to taste)
Pepper (to taste)
Cayenne pepper (to taste)
Mix all ingredients. I created 4 1/2 inch thick patties from this. They are very large “cakes”. I took them and dry fried them on both sides in a hot pan sprayed only with non stick spray. Serve with light sour cream.
Without the sour cream, ½ of this recipe (2 cakes) is just under 300 calories. If you want less calories, 1 cake would be plenty. I indulged with 2 since I had the available calories.
