Fast meals?

I leave for work at 6am, and don't get home until 6pm...and by then I am so tired I don't have time to really plan anything out....and I don't eat meat.....so any quick fast meal ideas would be great! (:

    Microwaved baked potato with cottage cheese and chopped chives on top (or with grilled onions and fake bacon bits on top of the cottage cheese) is my vegetarian friend's go-to meal. I've made it for myself on occasion--fast, nourishing and good. I put real crumbled bacon on mine though (don't like the fake bacon bits). :tongue:

    Another idea is to make a big pot of soup or stew and put it into individual servings and freeze for a quick meal when you thaw and heat in the microwave.

    My favorite superfast meal when I was a veggie was a huge bowl of frozen veggies covered with spicy tomato sauce and grated Parm. Simple, quick, filling, and low cal. Also enjoyed a can of black beans sauteed with a can of diced tomatoes (esp either the ones with balsamic vinegar or green chiles). Serve over your grain of choice. A veggie English breakfast would work, too - eggs, toast, baked beans, broiled tomatoes.

    I run into the same situations quite often. I try keep things around that can go together quickly. If you like to drink your meals on occasion keep fresh fruit on hand such as strawberries bananas and pineapple. A quick throw into the blender with some milk (I like unsweetened almond) and some ice and there ya go. I also throw in a scoop of chocolate or vanilla whey if I need protein for the day. Another quick idea is to keep a bowl full of salad greens in the fridge for quick salads, I like to keep cashews and other nuts to add to the salad as well (and chicken but you don't eat meat).

    Like the first reply, I make a lot of soups and stews in batches which I freeze and then heat up quickly when I get back after a long day. I rarely eat meat either. My food diary blog might give you some ideas... ameliasfooddiary.wordpress.com.

    For poster gives great suggestion; I do freeze beans, soups, chili so I have my own homemade frozen meals. Just put one in the fridge when you leave for work to defrost. Also you can buy per-cut/shredded veg (or chop up on the weekend), use leftover rice or spaghetti for fried rice or Asian noodle recipes; tofu comes cubed if you want to add just drain for 10mins while you wind down when you get home. Omelette with an egg and 2 egg whites and veg are calorie-friendly and fast.
    My best suggestion would be to plan ahead on the weekend. Just a half-hour or hour spent prepping should help you. I think that's one of the main things using MFP has taught me. Good luck!
