Mocha Layered Cake- 140 Cals/slice

Here's my recipe to share. This is a Mocha Layered cake for all you coffee lovers out there.

1- 10 oz. sugar free angel foo cake
1 tbs plus one tsp of instant coffee grounds, diveded
1- 1.4 oz. package of sugar free chocolate fudge instant pudding mix
3/4 c fat-free milk
1 c. frozen fat free whipped topping, thawed
2 tbs plus one tsp water
1 c. powdered sugar
2 tbs dry roasted pistachios, chopped

Combine 1 tbs coffee, pudding mix, milk in bow, stirring with whisk according to package directions. Fold in whipped topping. Cut cake into thirds horizonally. Set aside top two layers. Top bottom layer with pudding mix, place second layer on top of that, top with pudding, place final cake layer on top, cut side down. Combine remaining 1 tsp of coffee and water in bowl, stirring until coffee is dissolved. Add powdered sugar, stir smooth. Drizzle glaze over top and down sides. Top with nuts.
