Oven omelette

I am a HUGE fan of eggs but tend to stick to scrambling or frying them. Last night I looked up different ways to cook them and found this recipe http://allrecipes.com/recipe/oven-omelet/
Today I decided to make it for lunch however I did modify the recipe quite a bit (no potatoes or ham and I used one cheese slice instead of cheddar) and they turned out so well!

They were so good and low cal that I had two for lunch. I definitely recommend this!

    I'm always looking for simple ideas for breakfast and lunch that I can take to work and they look perfect :)

    Yeah I'm keeping the left overs for tomorrow. That's the plan anyway - my boyfriend has been eyeing them up haha

    I been doing something similar with a personal sized quiche dish.... I just fill the dish with chopped veggies, add scrambled eggs (about 3), some salt and pepper and I eat it with tapatío!
