What are some good "picnic-type" foods?

In the Spring & early Summer, my husband & I go out in our boat or go hiking 3-4 nights a week immediately after I get off work & don't get home until almost bedtime. This is in a remote area & we are usually taking dinner with us. In previous years, I've gotten take out about 1 night a week (which I'm now trying to avoid) & the other nights have been some variation of a sandwich with chips or veggies. Any ideas for easy prep healthy items that will hold up well in a cooler? It needs to work as our evening meal....not just a snack.

    Thanks for the suggestions! Have always fallen back on the same unhealthy foods, but now I see their are lots of healthier choices.:smile:

    I don't many suggestions except maybe hummus and edamame....maybe rice crackers....oh and fat free cool whip (with some sugarfree instant vanilla pudding mix stirred in)....to dip strawberries in.

    oh...i guess i DID have some suggestions after all....lol - - but what i wanted to say is HOW COOL that you and your husband do fun little dates like this during the week! have fun!
