Orange Muffins

I came across this recipe in a book I have. It's not a "diet" recipe and I didn't alter it at all to make it healthier, but I'm sure you could if you wanted to (try skim milk and low fat margarine?). I read on here the other day that someone loved muffins but that they had like 600 cals in them? Try these, they are yummy, lightly flavoured, and great with a bit of marmalade or blueberry jam!

1/3 cup margarine
1/2 cup sugar
1 egg
1 tsp grated orange peel
1/2 cup orange juice
1/4 cup milk
2 cups all-purpose flour
2 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt

Blend margarine and sugar for 1 minute. Scrape bowl, Add egg, orange peel, orange juice, and milk. beat for 30 seconds.
Combine flour, baking powder, baking soda and salt in separate bowl. Add to wet mixture. blend for 15 seconds, or just until moistened, do not overbeat.
Fill muffin tins 2/3 full, bake at 400degrees F for 20 to 25 minutes.

Makes 12
Per serving: about 166 cals, 3 g protein, 25 g carbs, 6g fat.

    THANKS FOR SHARING.

    I WOULD MAKE THEM RIGHT NOW IF I HAD AN ORANGE. THEY SOUND DELICIOUS, AND NOT BAD IN CALORIES EITHER.

    THEY WILL MAKE A GREAT BREAKFAST.

    I'm going to try these and substitute half of the margarine with applesauce. (In most recipes, applesauce can be substituted for all or most of the fat/oil.) Sounds yummy! Thanks for sharing.

    True - often when I bake muffins/cakes I replace the butter or oil with twice the amount of apple sauce and comes out yummy.

    I saw a recipe years upon years ago from that Nigella (Food Network) where she pured tangerines with its skin and everything and she used very little flour and butter and made a cake out of it. Let me tel you I was shocked. I am allergic to citrus, otherwise I would have made it by now.
