Confetti Quesadillas.

I made the best recipe. I will type it here and put the changes I would recommend. Feel free to make your own too.

Confetti Quesadillas

1 soft taco dinner kit
1 cup garden vegetable flavored cream cheese
1 10 oz can of chunk breast of chicken, drained and shredded
7oz. Can whole kernel corn
1/2 cup black beans, drained and rinsed.
A few drops of hot sauce

Mexican toppings such as sour cream, guacamole, and salsa.

*** I would use fresh salsa, wild tree taco seasoning ( no preservatives) and chicken I cooked. I also did not use toppings.

Spread 2 TBS of cram cheese on EACH of the 8 tortillas. (Can use less).
In a small bowl, combine chicken, taco seasoning, taco sauce, hot sauce, corn and black beans. Spread chicken mixture over each of the 4 tortillas. Top with remaining tortillas. Place onto ungreased baking pan (or cookie sheet). Bake at 400 for 12 minutes or until golden brown. Cut into wedges and serve with toppings.

Sounds really good. Since I can't have wheat and should avoid corn, I might eat just the filling.
