better-for-you homemade pepper jelly - any ideas?

Hello! I recently went to Southern Arkansas to learn how to make homemade jelly from my husband's family matriarchs. Being a city girl, I always thought jelly was something you bought in a store. Now I am fascinated with creating my own. That said, I was shocked to learn the amount of sugar we used in our batch of plum jelly - a 4lb bag for 4.5 jars.

I love hot pepper jelly and I was hoping someone may have a recipe for a healthier version. Thanks!
