Having some trouble reaching daily calorie goal :(

My daily calorie goal is 1200, on days I work out I burn at least 400 calories.
I eat when I'm hungry, but I have a hard time reaching my calorie goal while eating healthy.
I can't eat bigger portions because my stomach simply doesn't hold that much food
I don't typically like snacking unless I get hungry.
What are some good, healthy ways that I can up my calories?
((if you look at my diary please ignore that I haven't eaten breakfast the past few days, I was in a car accident a few days ago and my pain medicine has me sleeping a little late! I'm off of it as of today so breakfast will be back on the menu tomorrow))

Sauté veggies in a little real butter. I love asparagus this way. Add a handful of nuts to veggies, pasta, stir fries. Have a quarter to half a cup of high quality granola from time to time. Put a bit of fresh coconut on fruit. Those are small healthy additions that make food deliciously satisfying.0

Asparagus is delish. You can drizzle olive oil over it and bake it at 400* for about 20 minutes. Dip it in mayo. Yum. That will definitely add some calories. You could also add cheese to different things. Olive oil is great to drizzle over pasta or cooked veggies. A handful of nuts or a tablespoon or two of almond butter or peanut butter will also boost your calories. I usually have almond butter with an apple. It doesn't add bulk - just longer fullness. You could also eat full fat dairy like yogurt and cottage cheese.0
