French Toast Alternative

Hey I just made this breakfast this morning. It is a Weight Watchers recipe my mother-in-law made when we were down there visiting. Tastes a lot like french toast, but way healthier! Here goes....

2 slices Weight Watchers multigrain bread, torn up
1 small apple, grated or cubed
1/2 cup Egg Beaters
3 packages Splenda
2 TBSP Skim milk
Cinnamon (to your liking, I used lots)
Pinch Icing Sugar (optional)

Mix everything together except icing sugar then put in non-stick frying pan with a bit of Pam in it. Cook approx 4-5 mins (until moisture is cooked out and eggs are done) on med-high temp and stir while cooking (like when making scrambled eggs). Put on plate and add a pinch of icing sugar if you like.

I figured out calories on MFP and it is 234 for the entire recipe (excluding the icing sugar because it's not in the database).

Pretty good and filling!
