Hey all, I just wanted to share something with you. Since I just went vegetarian, I've been trying a whole new world of foods and I recently found my new FAVE sandwich. 
It's super simple, take a serving of chick peas, some green onion and chopped tomato and heat them all up in a pan (you can put some salsa in there too if you want). While that's cooking slice a whole wheat pita bread open and spread it with re-fried beans (and if you want to, a cheese spread, like the Laughing cow ones). Then just stuff the pockets and chow down. I know it sounds kind of bland, but it's not.

sounds delicious. i like to make something similar. i use a flat-out flatbread and spread it with laughing cow cheese. then i chop some lettuce, onion, tomato and pepper to put on there. then i use canned, rinsed black beans with a scoop of salsa and heat them in a microwave. i top the flatbread with the bean/salsa mixture and roll it up. it makes a nice lunch sized wrap. sooooo yummy, but it can be messy. i'm not very good at keeping it all wrapped up while i'm eating. lol!0

That sounds good too! I might try that next :happy: What's funny, is I always have a hard time keeping wraps together and for years a worked in restaurants that wrap theirs in foil and never once have I thought about doing that at home:huh: *duhhhh* haha0
