Leftover oatmeal muffins
I was looking for a way to use up some leftover oatmeal and came across a recipe I thought I'd share.
1 cup leftover oatmeal (mine was from steel cut oats with apples and cinnamon)
1 egg
1 TBS light butter
1/2 cup milk (I used 1%)
1/4 cup honey, maple syrup or agave nectar (I used maple syrup)
2 TBS baking powder
1.5 cups flour (I used whole wheat)
1/2 cup mixins (I used sunflower seeds) any combination of dried fruit, nuts, seeds, chocolate chips, etc. would work
Mix wet and dry ingredients separately and then combine. Bake in regular sized muffin tin at 400 for 20 minutes. Makes 12. For mine, they came out to:
125 calories, 17 carbs, 4 fat, 4 protein
