I keep passing on at the grocery store, and think I'd like to try something new. But honestly I'm totally befuddled as to what to do with it? any recipe ideas?

I've only ever had celery root made into a soup, but I suspect it would work ok as a roasted side dish as well.0

Mash! Or cut them up in fries and oven roast them.0

Add it to red lentils and a few other veggies to make a veggie burger. Yummy!0

Celery root puree (substitute for mashed potatoes) or treat it like any other root veggie and roast or braise it0

Is that what we call celeriac in the UK? Like a big turnip that smells of celery? If so, cube it and boil with cubed carrots, crush them with lots of black pepper as a side dish0
