Pork Tenderloin

Pork tenderloin is on the menu tonight. I'd love some new recipe ideas...

    1 1/2 cups chopped apricots
    1/3 cup apricot preserves
    1 tablespoon hoisin sauce
    1/ tablespoon reduced sodium soy sauce
    1 pound pork tenderloin cut into 1 inch pieces
    salt and pepper
    2 teaspoons olive oil

    stir together the first 4 ingredients in a small bowl

    season pork with salt and pepper. heat oil in a large skillet and add pork. Stir until lightly browned about 5 minutes. Stir in the apricot mixture. Bring to a boil, reduce eh heat to low, cover and simmer for 10 minutes or until the pork is cooked through and the sauce is thick. I serve it over rice. makes 4 servings.

    The apricot add a bit of sweetness to the meal --- I have a BIG sweet tooth. The nutritional facts do not include the rice.

    i do pork in a george forman grill and as a side dish - chop a butternut squash into 1 inch chunks throw some cranberries on top and add a peeled sliced apple on top of that, sprinkle with a little bit of mixed sugar,flour and nutmeg and dot with a few pea sized knobs of butter and put in the oven until soft, cooked through and slightly golden on top. also have some cranberry sauce to dip the pork into.

    Right now, I am getting ready to put some pork tenderloin in a crock pot with some liquid smoke. I cook it slow, shred it, and serve with barbecue sauce. I am serving it to 40 people tomorrow night. Yum!

    I pan sear mine in an iron skillet with a little olive oil then coat it with a mixture of fat free sour cream, dijon mustard, garlic powder, and thyme then put in in the oven to bake for about 45 minutes. It's delicious and my entire family LOVES it!
