New to MFP - not new to losing weight

Hi everyone,
I'm Nick from Derbyshire, UK and I've just started losing weight....again.
Quick story: During University I turned into a fatty. Lots of beer and not much movement, so after University I spent my summer and autumn in a gym and lost 2 stone. Gradually over time I've put it all back on again, (with fluctuations in weight up and down).
Just signed up for an endurance challenge and if I don't do something about all this lard I'm going to die before getting to the end of the challenge.
So, I've downloaded My Fitness Pal, I'm running on a treadmill and lifting weights. Plus I'm using Maximuscle Pro-max Diet and Thermobol (used Thermobol previously to help shift the 2 stone).
Really I'm after tips and advice from people on what healthy foods are tasty. I really don't like boring salads / meat & two veg type meals, so any advice on how to have a healthy curry / stew / pasta type meals would be great.
Seeing some of the amounts of weight people on here have lost is also great motivation. Well done all of you!
