Kefir Water Nutritional Value

I've begun fermenting my own Kefir water and love it. Does anyone know how to determine the nutritional value? I know it would vary depending on how much sugar or molasses (or other ingredients) you use and how long you allow it to ferment. Not sure if it's safe to assume that after, say 48 hours of fermenting, there would be half the amount of sugar left in the container since the Kefir grains are consuming the sugar. I'm mainly trying to figure out the approximate calorie count and sugar count.

Has anyone who ferments your own water figured this out yet? (For anyone else who has no idea what I'm talking about, do a search on Kefir and you can see all the benefits of drinking it - either Kefir water or Kefir milk)

I ferment kefir water! According to Cultures for Health, a standard 48 hour fermentation process eliminates about 80% of the sugar, and the remaining 20% turns into fructose.

    Hope that helps!
