And here were my ingredients and directions, slightly adapted. These are low-fat, vegan, not too sugary, and absolutely delicious. They wind up very moist!
Ingredients:
3 ripe bananas
1 cup of 100% pumpkin
3/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup oats-ground (will need more than 1 cup to use in food processor, leave part of it unground though)
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
INSTRUCTIONS:
Preheat over to 350 degrees Farenheit. Grease/spray a large loaf pan. In a large bowl, whisk pumpkin, applesauce, and vanilla until well mixed. Add the bananas and mix together, but leaving some banana chunks! I used a spoon for all of the mixing to avoid mashing too much with a fork. In a separate bowl (or just on top of wet ingredients) add the flour, ground oats, baking powder/soda, spices and salt. Mix everything together, but leave some banana chunks surviving-they are the best part! Pour batter into pan and bake for 60-80 minutes until deeply browned and springs back when touched gently.
Makes 1 loaf with 12 slices or you could make it into 12 muffins, but adjust the time as needed.

Did you really not add any sugar? I greatly reduce the sugar in my baking but no sugar with pumpkin. Let me know and I will try your recipe as it. It is very similar to what I already make.0

Bump. Can you tell that there is no sugar in it? Thanks.0
