Very easy and delicious soup! One of those guilt-free gorge yourself foods.
ROAST CAPSICUM AND CHICKPEA SOUP!
INGREDIENTS:
2 small red capsicums (cut in haled, seeds removed)
1 brown onion (cut in half)
400g tinned chickpeas, rinsed and drained
2 tbsp tomato paste (1/2 small tub) ** optional
2 tsp garlic
2-4 tbsp hulled tahini (to taste)
1/2 tsp mustard seeds (you could use dijon mustard instead)
1 1/2 cups reduced salt stock (I use chicken, veggie stock is also yummy)
spices (I used cayenne pepper, cummin, sweet paprika, cracked black pepper)
METHOD:
Roast capsicum and onion for 25-30 minutes or until desired.
Using a blender, blend chickpeas, capsicum, onion, tomato paste, garlic, tahini and 3/4 cup stock.
Pour into a pot on the stovetop.
Add the rest of stock as needed until you get it to a consistency you like.
While simmering on a low heat, add spices as desired.
Keep tasting it until it's just the way you like ti.
Serve with crusty bread (if you have enough calories banked )

And another one: 5 min Tuna and Sweetcorn Soup
Not the most delicious-est thing ever but a nice way to eat tuna and very filling
1 courgette (that's a zucchini)
1 can tuna in brine or spring water
3tbs canned sweetcorn
1 tsb bouillon/stock cube
Grate courgette into a small saucepan add boiling water to almost cover courgette, cover will lid and allow to cook while you drain and rinse tuna (esp if tuna is in brine). Add tuna and remaining ingredients to saucepan and heat through.0 -
