Help - what can I bring to work potluck?

    I recommend investing in a crock pot and using it to bring a large, healthful meal in for your work potluck. The possibilities in a slow cooker are honestly endless. Go to skinnytaste.com and check out the crock pot recipes. You can do something as simple as pulled pork or turkey meatballs to sante fe shredded chicken. Those types of things are huge crowd pleasures and one serving of pulled pork clocks in at around 200 calories. Not too bad!

    I you have a crockpot like the lady below suggested I think it is a great idea. Look up recipes for slow cookers and you will find sooooo many good ones that are literally the easiest things to make.

    If someone hasn't already, you can be the person who volunteers to bring the veggie tray. Otherwise I'll second the crockpot idea. Beef and veggie or beef and barley soup/stew is good.

    Go with a main dish so you know there will be something filling.

    - chili in a crockpot
    - stirfry with lean protein with pineapple
    - bean salad
