Whole Wheat Lavash as your pizza crust!

Tonight I had forgotten to pick up some frozen pizzas for my partner, who lives off of these things. I was thinking maybe I could throw together something at home - I had some marinara sauce, some cheese, a handful of veggies and chicken in the fridge, but nothing is complete without a crust, until...

I spotted the whole wheat lavash package in the fridge. Oh boy, it turned out better than I thought it would. If you're looking for a thinner crust pizza, this was an awesome choice. Plus, one sheet of lavash (California Lavash Company) was only 120 calories!

Here was tonight's recipe:

1 sheet of whole grain lavash
1/2 cup marinara sauce (I use Whole Foods 365 brand)
2 oz of Shredded Low Skim Mozarella (again, 365 brand)
2-4 oz of shredded chicken
2-3 brown mushrooms chopped up
1/4 onion chopped up
sprig of chopped of cilantro
squeeze of lime
2-3 tablespoons grated parmesean

1. Preheat oven 350 degrees, pop on a tray (or even on some foil if your oven can't fit one, just be careful to support the bottom of it :wink: )
2. Cook for 8-10 minutes or until the cheese begins bubbling around.
3. Cut into however many pieces, roll it up and slice it, or simply fold it over - there's your new quick spin on pizza without all the dough! :)

p.s. if you want a crispier crust, let it go a little longer - I noticed the bottom of the pizza still had a little softness to it but the edges remained nice and cracker like.
