BL Chicken Parmesan

I tweeked a little on this recipe since I really wanted to keep it low fat etc...

2 Skinless Boneless Chicken Breasts ( 4 oz each)
1 can Del Monte Petite Dice Tomatoes ( Italian Seasoning)
1 Tbs olive oil
1/2 cup Kraft Fat Free Mozzarella Cheese ( shredded)

Coated the breast with the olive oil and cooked till slightly brown in the pan, Lower the heat and poured can of the diced tomatoes over them.. I added a little more parsley flakes and a sprinkle more of Garlic Powder.
Covered pan and let simmer till chicken was cooked, topped with the FF cheese until melted.

Served with a small salad w/ lite Balsamic Vinagrette and 1/2 cup of sweet potatoes mashed with Sweet N Low and a sprinkle of cinammon..

I am not really good at making these fancy elaborate dishes LOL so all my stuff is fat and simple but this was awesome!!
I had a hard time finishing it all, very filling and I think when I calculated it all up was under 250 calories and almost zilth of fat except for the OO which is the good fat..
