Spring has Sprung!

I'm so incredibly excited about the appearance of spring fruits and vegetables in the grocery stores! There's just a larger variety than there is in the winter. Right now i'm especially loving fresh asparagus, green beans, strawberries, and melon. How do you like to prepare your spring produce?? post recipes and ideas here!!! thanks!

    I just came home from a vacation in the philippines and the cuisine there was truly inspiring.

    they use a tangy/sweet/sour dressing that I have learned to recreate and it is good on anything (sweet potatoes, potatoes, fresh vegetables, rice, chicken, etc. ). Basically I just throw a bunch of healthy things in a bowl then put this dressing on it. It has so much flavor and is only 15 cals a tbsp.

    3/4 cup vinegar (I use cider vinegar but I think any type will work)
    Salt, 2 tsp
    Sesame Oil, 0.75 tbsp (this can easily be omitted and won't affect the flavor much)
    Honey, 1 tbsp
    Fresh Chives, 1 tbsp chopped
    Cilantro, raw, 1 tbsp
    lots of pepper
    tsp of lemon juice

    I mix everything together then pour it into a used salad dressing bottle. then I stuff in a few sprigs of cilantro and chives and 2 crushed cloves of garlic. shake and pour!

    I am just looking forward to fresh berries from the farmers market. I like to leave them in the sun for a day or so after picked and cook them down with a bit of water until they are mushy and smooth... perfect spread or addition to oatmeal, and no added sugar like jelly or jam.

    Also, fresh spinach..... I love the stuff. Now I want a spinach/strawberriy salad. Boooo.
