How to make Turkey and Spinach a bit more exciting :-) Turkey stuffed with trimmed smoked bacon, mozzarella and basil with a smoked paprika rub (topped with more mozzarella!) on a bed on mashed baby new potatoes and baby leaf spinach.
640 calories, 80g protein, 31g carbs, 20g fat. I eat this kind of meal usually twice a week, never gets boring! (All the carbs is from the potatoes, so if you want less carbs, add spinach, subtract potatoes!)

Ingredients (For 1)
60g Light Mozzarella
170g Turkey Breast
100g Baby Spinach
1 Smoked Bacon Medallion
180g Baby New Potatoes
5g Butter
2 Basil leaves
Paprika
Method
1) Place 1 slice of mozzarella, 1 basil leaf and the bacon on the breast of the turkey, roll it up and secure the roll with a wooden or metal kebab stick. Sprinkle on paprika and rub in.
2) Cover in foil and cook for 30 minutes in the middle of the oven at 200oC. Then remove foil, add another slice of mozzarella and a slice of tomato if you wish. Return to oven for a further 10 minutes.
3) Mash together cooked potatoes with wilted spinach and butter, pinch of salt and pepper and add any juices from the cooking pan.
And then pile it up on your plate!
Do you see how simple it is, yet how amazing it looks? Just imagine now the smell and taste…!
