Gaining weight....after losing 80 pounds

Gotta question. Over the last 2 months, I've gained almost 10 pounds, with most of that in my waist. My waist has gone from 33.5 to 37 in that time period with no other measurements really changing. Fat mass is up, muscle mass the same.
I've been on this weight loss journey for a couple of years, and I've seen plateaus, and there is no element of panic or "Woe is Me, My world has fallen apart.!!!!!" but more an observation of "hmmmm, that's odd...what is up? how and what do I adjust?" My trainer is a bit stumped too, so I thought I'd toss it out to a group of people with a whole lot of experience.
I work out 6 days a week, with cardio every day and twice a day 3 days a week. Mix of cardio - spinning, elliptical, rowing, running. Weight lift 2- 3 times, personal training 1 day and yoga 3 times. Sundays are rest days
My diary is open - calories run from 1200 on rest day to 2100 on a big workout day. I try to shoot for about 50% carbs, 25% fat, 25% protein split. I eat very little processed food and try to keep my sodium down. 8 glasses of water- minimum. Basic vitamin supplements, no medications.
I'm 51 years - 5'4"
I do have exercise-induced hypoglycemia, so the carbs have to stay fairly high
