PCOS/Insulin Resistance Nutrition Help!

Okay question for any nutrition buffs out there. My naturopath wants me to try a diet with a ratio of calories 40% from carbs/30% from protein/30% from fat. Is this even possible as a vegetarian (with occasional fish) without eating scoops of vegan protein powder or egg whites? Normal great protein sources sources for vegetarians are legumes, nuts, eggs, seeds, certain grains, etc. However, it seems if I add any of them it throws my ratios of fats (with nuts and eggs) or carbs (think legumes) all out of whack. Am I just being too obsessed with the numbers? It seems I can't get over about 80 grams of protein a day (and I should be getting around 150 with an 1800 calorie a day goal) without either going to high in carbs or fats. The reason for this is to treat PCOS/insulin resistance. I drink Shakeology daily and also have some vegan protein powder, as well as exercise 30-60 minutes/day 6 days/week. I just finished the Ultimate Reset and still struggling to get my body to a happy place.
