Crockpot Recipe Question

I have some recipes that say to cook on high for one hour and then turn the setting to low for the rest of the cooking time.

If that's not an option (due to my schedule), should I:

A) Cook on low the whole time,
B) Cook on high for anywhere up to four or five hours and then switch to low when I get home, or
C) Keep saving these recipes to try sometime when I'm home all day to babysit the crockpot?

Does it even really matter?

    cook it on low the whole time, check it when you get home and if you feel in needs a little more cooking, turn it up for a little while, then eat it.

    The only difference between low and high is the speed at which it comes to full temperature. They will both ultimately get to the same temp. Because the temperature is still pretty low, some recipes don't recommend that you cook a huge roast on low the whole time (they want to get the temp up faster so that the bacteria that may be harmful don't get the chance to proliferate for a long period of time). If you are really worried about it, you can solve this by cutting the roast in half and doing it on low the whole time. For all other recipes, I really don't think it makes a difference if you cook on low for the whole time.

    Thanks! My crockpot is new and I generally end up cooking things more than necessary, so I'll just keep it on low the whole time for sure. :)
