I use my crock pot for soups mainly. My favorite is an onion soup made with chicken stock or a mixed veggie soup. Since it looks like you like to use a lot of chicken I would suggest a curry. You could even add some rice or veggies.0

I often think "geographically" to find variety. You've done the Italian and Mexican thing. What about Thai, Chinese, Phillipine, etc.
Google something like "slow cooker Thai chicken" and you will see a bunch of recipes come up. One of the first that comes up is Massaman curry. Head to an Asian market or to Amazon if no Asian market is nearby, and buy some Massaman curry paste. I have a container that cost all of $2.45 and is enough to last for years! The advantage of making homemade curries is that you can go light on spices and avoid making it too hot.
Want to go Phillipine? Google "chicken slow cooker adobo" and you'll pull up a recipe with soy sauce as the most exotic ingredient so you are likely to have everything you need right at home.
I like variety in cooking so I am often googling whatever ingredients I want to use up to find recipes.0
