After dinner snacking and calorie sabotage

I've been having this nagging thought lately - I'm wondering if the logging of all of my food is actually sabotaging my calorie intake. Here's why - If after dinner, I have say 500 calories left - I will eat until I have eaten up to my allowed calories for the day...every day and even go over some days - Why do I do this when I'm not even really hungry? I must find a way to alter my way of thinking, because I should be eating an average of my allowable calories - which would allow for going over some days. So maybe the idea of a calorie limit or in this case, making my calorie allowance, is not the best method, but instead, healthy meal choices with one snack in the evening would be a better mindset for me. It would require me to break the habit of relying on the logging though...
