How do you guys like to eat ricotta? I'm seeing it come up in a lot of recipes as I browse but I'm wondering if there are many basic ways to eat it.. but of course any awesome ricotta recipes welcome too!

For breakfast I occasionally have ricotta cheese drizzled with some honey and fresh blueberries. Mmm

Think of it kind of like cream cheese. Sweet with sweetener and cocoa powder or honey and lemon zest or savory with herbs and pita bread.

Saute some spinach and garlic in olive oil. Mix ricotta with the spinach and garlic. Season with pepper. Spread on sandwiches, wraps, crackers, etc.

Can't remember the exact recipe, but I silced a zucchini in half the long way, scooped out some of the middle and put a ricotta mixture in the zucchini and baked it. YUM
