Buffalo chicken salad..this is my new fav!!

2 tablespoons of hot sauce
2 tsp paprika
1 1/4 lbs chicken tenders
non stick cooking spray
1/2 cup of mayo, light, fat free, regular, whatever you like
1/2 cup crumbled blue cheese, I used less than this...again up to you.
1 tsp white wine vinegar
6 cups shredded lettuce..whatever you like (I used a combo of iceberg, romaine and spinach)
1 cup diced red pepper
1 cup shredded carrots
1 cup chopped celery
1/2 cup thinly sliced red onion

mix together the hot sauce and paprika, add chicken toss to coat.

Coat a pan with spray cook chicken med-high heat for 4 minutes a side, or until cooked through, Icooked the peppers along with the chicken cause I like my peppers semi soft, but you can add them raw with the lettuce and carrots

Whisk together mayo, blue cheese and vinegar, add lettuce, carrots celery and onion, toss to combine, layer the chicken tenders on top and serve.

the way I made this..my numbers were...296 calories, 39 g of protein, 15g carbs 11 g fat, 6 grams of fibre. This made 4 servings and was yummy!!..and it took literally 10 minutes to make
