Hi All,
I have been craving something sweet all day today, and as an avid baker (half of the reason I'm the size I am now!) decided to bake something low calorie that would satisfy my sweet craving. And out came these mini meringues!
Ingrediants:
4 egg whites
200g sugar
2 tablespoons good cocoa
Recipe:
1.Preheat the oven to 150 degrees celsius, and line a tray with baking paper (I had to use 2 trays)
2. Whip the egg whites until they have turned opaque and form stiff peaks
3. Beat in the sugar a table spoon at a time, the mix should turn glossy and get stiffer. When all of the sugar is incorporated the mixture should be thick, shiny, and the ultimate test (not for the light hearted..) is if you turn the bowl upside down the mix wont fall out!
4. Gently fold in the cocoa.
5. Fill a piping bag with a large round nozzle (or use teaspoons) and pipe or spoon little blobs onto the baking tray, quantities will vary depending on how big or small you make them, but I got 85 mini meringues out of my batch.
6. Put in the oven and turn it down to 140 degrees, they will take between 40 mins to 1 hour to cook again depending on the size, when they have dried out and can be peeled away from the tray, turn the oven off and leave them in the oven to cool completely.
7. Carefully remove them from the tray and enjoy!
Total Recipe Calories: 908
Calories per piece (based on 85 pieces): 11

Interesting idea! Would be even better if you added some protein powder to it, too0
