Fresh Meat

I am wondering if fresh beef has a different nutritional value than what is bought at a grocer's or market. My family butcher's our own steer every year and we have it processed at the butcher's/meat market. We do not buy our beef from the grocery store at all. Does this change any of the fat, calories, etc. when counting in the food diary? Also, is there a difference with fresh eggs as opposed to eggs bought from the store? I would really like to know.
