Lunch ideas?

I work in an office so I bring my lunch with me every day to avoid the temptations of walking into a cafe when I'm hungry, and also it saves me loads of money! For the last couple of months I've been making houmous and cucumber sandwiches on granary bread, it only costs me around £3 a week and is about 350 calories. I usually then have an apple or something too (fruit is free at my workplace).

Anyway, I'm getting a bit bored now, and wondering whether to mix it up, also considering that it might be better to not eat bread every day. Can anyone give me ideas of something else cheap and easy to bring in? Preferably something I can prepare the night before as I'm not a morning person!!

    There are loads of different sandwich options, beef, turkey, cheese, ham, cottage cheese, salmon, cucumber, with different salad ingredients on all types of different bread ie wraps, pitta, bagel, muffins.

    Mixed salads with meat or cheese, cooked rice/pasta/couscous mixed with vegetables or meat or fish, vege quiche with salad, soups, cereals.

    Do you have a microwave to reheat food? If so jacket potato with various toppings, leftover dinner from the evening before, even (dare I say it) a healthier ready is a better option than getting bored and resorting to fast food.

    How about a wrap... one that is low in carbs and low in sugar... You like hummus. I add avocado, which is a great fat to eat and I add salad greens, maybe a slice of turkey or some tuna, maybe a bit of feta cheese

    You can load it up with anything... make it as big as you like

    I rely heavily on soups. I will make a big pot on the weekend and use it all week for lunches. This week is Chinese hot and sour soup. Cheap, easy and delicious!

    Same here! Soup is one of the easiest thing to do and you can easily make a big load, freeze them in individual sized containers.... everytime I make soup, I make at least 8 - 10 servings! each ranging from 280 - 350 cals. (dried mixed beans are your best friend - high in protein and relatively cheap to get)

    Another thing I like to do is massive veggie stir fry, chuck in some egg/ chicken bits/ tofu for protein.

    My lunch this week is brown rice, black beans, grilled chicken, shredded cheese and salsa. I cook the chicken and beans on Sunday, the rice is from trader joes and precooked, just have to warm it up. Every morning I heat up the rice, scoop some back beans and chicken, add cheese and salsa and I am done. Put it in the microwave at work and I have a great lunch. I am not a big sandwich or salad person for lunch.
