    I love sweet potatoes and eat them often. I bake mine and then sprinkle a little of the sugar free coffee syrups on them...my oh my!

    sweet potatoes are crazy good for you, just be sensible about how you prepare them. personally i make homemade sweet potato fries in bacon fat and covered with spices/cinnamon.

    Even if the glycemic index wasn't a terribly outdated, flawed concept (which it is since nobody fasts for 12 hours then eats only a carbohydrate), why would the sweet potato be a problem?

    I eat sweet potatoes in almost everything that you would eat a regular potato, including mashed with garlic and salt. Yum!

    Delicious cubed and roasted, or just baked. I prefer mine with a healthy portion of (Kerrygold) butter.
