Coconut Flour Cookies

I was craving cookies but didn't want to go calorie-crazy, so I whipped up a lighter version!

Makes 12 small cookies

Ingredients:
- 3 tbsp coconut flour
- 1 tbsp almond meal
- 1 tsp ground cinnamon
- 1/4 tsp baking powder
- pinch of salt
- 1 tbsp unsweetened shredded coconut
- 2 tbsp peanut butter
- 1 large egg
- 1 ripe banana

Mix all ingredients until batter is sticky. Roll into small balls on baking sheet, then press down with fork. Cook at 350 degrees until golden brown (about 20 minutes).

Nutritional Info:
The entire batch:
570 calories / 56g of carbs / 32g of fat / 20g protein / 19g fiber

Per cookie:
44 calories / 5g of carbs / 3g of fat / 2g protein / 2g fiber

They aren't super sweet, but they satisfied my sweet tooth and they're actually quite healthy! Enjoy!

    I just baked them. They are in the oven...

    quick tip - wet your hands before forming batter into balls, wetting the fork helps too.

    I've been using grains less and less, but I love my baked goodies.
    I've been using coconut and almond flours in a lot of different recipes and they're delish!!!

    I'll have to try these cookies soon!
