So, as I live in Australia (and in the middle of nowhere to boot), I can't get always get access to certain types of food.

But the other day when I rocked up to Harris Farm, I discovered they were selling the elusive spaghetti squash I'm always hearing about here and on recipe websites.

I bought one of the smallish ones to try and really want to make something special with it :)

What would you recommend?

I have a giant pot of squash that I baked, shredded it like spaghetti, and added some sauce.

I added a tomato sauce that I made with garlic, some hamburger meat, some grilled onions, and some green olives. So good.

Ooh, sounds nice  Are there any particular recipes you use for the sauces? I'm trying to get back into cooking (and stop living out of the freezer) and want to start collecting some good ones.

I have done a spaghetti squash lasagna. Go on to www.skinnytaste.com and look for it. It was so good!! I have also made my spaghetti squash in to a taco bake. Cook the spaghetti squash like normal then scrape it out in to a casserole dish add cheese and salsa mix and then bake in the oven until the cheese is melted. Very yummy!!

I LOVE Skinnytaste recipes - so many innovative things like that to make things just that much healthier. I will definately check it out - it's been a while since I've had lasagna.

...and all this talk of taco bake is going to make me start drooling if I think about it too long. Especially since it's FREEZING (and only going to get colder) here, and it sounds so delicious and warm. Thank you!

Well, my suggestion was going to be Pad Thai, but I am not sure if you can get the seasonings in the middle of no where Australia?

So that's two votes for Pad Thai! Thank you :)

I reckon I can probably find the sauce pre-made at the supermarket, since Pad Thai is quite a well-known dish. Though I don't know if I'd be able to get the ingredients to make it from scratch, haha
