Struggling with job and weight loss challenges

I have worked nights for most of my 23 year nursing career. One would think as much walking as we do as a nurse you wouldn't have problems- not true. I find that my diet and times I eat has played an extreme roll in my weight. The only times I haven't struggled with my weight was when I was pregnant which ISN"T going to happen again in my lifetime and when I worked days. Even though I was never really a believer in circadian rhythm after my stretch of working days I believe it whole heartedly.

The challenge I face is trying to loose weight, exercise while working 3 12 hour night shifts a week. Doesn't sound all that hard but it is more difficult than one would think. You don't just adapt your sleeping and eating times you adapt your entire lifestyle multiple times a week. So the challenge is to find out when to eat, what to eat and the best mixture of it all. If I can find out this information I should market it especially if it works for more than just me.
