Best diet for my cat

I've posted this only a couple times today but I'm concern about my cat and her huge 3lb weight gain. Is a clean diet, a gluten free diet, a mouse only diet, a paleo diet, a vegan diet, or a cat nip only diet the best way for her? How many kitty calories does she need do I add back the exercise calories after she pounces on her mouse? If she drinks tuna flavored crystal light does that count as water?
