Stuffed Portebello Mushrooms

and they were amazing. You actually can stuff the mushrooms with whatever you like and they turn out great. I layered the bottom of the mushroom caps (large ones from Costco) with spinach leaves, added 2 tbsp of hot salsa, added chopped leftover chicken on some and hot sausage on others, then I made a cheese mixture using all low fat cheeses (cream cheese, ricotta & shredded mexican). Cooked them for 20 min at 350 and they were a very nice healthy meal. You can pair them with a side salad or soup and feel like you've just eaten a restaurant worthy meal.

    I usually make a mixture of onion (carmellized) and garlic, light cream cheese, bacon bits and light shredded cheese. I pan fry the portebellos to release the water and then stuff them and bake them for around 25 minutes. We have made these a few times as appetizers and received rave reviews. We also make them as a meal sometimes. Delicious - I think the original recipe was from Food.com, but we've been making them for so long that I forget! They are very low-carb this was and are also low-calorie if you use light cheeses and bacon bits (which we do).
