spinach quiche

This is one of my absolute favorite low-cal recipes! I make it probably once a week.


Spinach Quiche


Ingredients:

2 blocks frozen spinach

2 eggs

½ cup low-fat mayonnaise

2 tsp onion soup mix (from the packets)

1 non-deep-dish frozen piecrust (so, a regular one, but if you can only find deep dish you may want to make 1.5 of the filling)

1/2 onion, chopped

1 tsp nutmeg


Instructions:

1. Preheat the oven to 350 F.

2. Thaw frozen spinach and squeeze/pat the excess water out with paper towels. This is a very important step!

3. Combine all ingredients (minus the piecrust) in a large mixing bowl.

4. Move the filling to the piecrust.

5. Bake at 350 for 1 hour

This is saved as "1/4 spinach quiche" for a fourth of the quiche in the food database on MFP, and here are the nutrition facts for that serving size (1/4).
