Leftover Easter Turkey

I have some leftover turkey from Easter, like half the bird (so really like 4 cups if I diced it). Does anyone have any suggestions besides the typical creamy noodly casseroles and wraps? This is day three and I'm really getting tired of it, LOL! Even if they have low fat/low calorie casserole suggestions. Thanks a bunch!

    I shred the turkey and top with a slice of low fat white cheese, tbsp of low sugar cranberry sauce, all on a toasted 1/2 egg bun. Yum

    curry is the solution to just about everything.

    Try it in an omelette, top a green salad, add a little mayo or yogurt and make a salad for sandwiches (nuts, apples, celery, pomegranate seeds, cranberries are all great ingredients in a turkey salad), shred & add some BBQ sauce and use like pulled pork for sandwiches... left over chicken or turkey is very versatile. And if you're really sick of it, bag it and freeze for use later this month. :wink:
