Carrot Soup

My mom came home from a local deli once with a cup of carrot soup that just smelled and tasted amazing. Since she's awesome, and we don't live within twenty minutes of said deli, she told me how to make my own version of it.

All you need to do is:
1. carmelize some onions in a large skillet - just enough to bring out the flavor. (I usually do this in a tablespoon or two of extra virgin olive oil.)
2. clean/peel and chop up about two cups of carrots. (The smaller the pieces the less time you'll need to cook them.)
3. Add enough beef broth/stock to cover the carrots - then cover the skillet and let it simmer.
4. puree

It comes out smelling like a potroast, and is sweet and delicious.

If it's a bit too thick, just keep adding beef broth. If it's too thin when you're done puree-ing, just set it back on the stove to cooke some of that liquid off.

    For a variation, you can also roast the carrots before adding them to the soup, since roasting every vegetable is a glorious idea.

    I add fresh ginger to mine to give it something extra.
