Oven fried chicken w/ potato flakes
I roasted chicken quarters last night and brushed in an egg wash then spread about 1 T of potato flakes on the top side only.
They turned out moist inside and crispy outside.
It was all about the egg wash.
Make sure you use potato flakes, not buds. I made that mistake once.:smokin:

Flakes are light and flaky like a snow flake and the buds are hard and crunchy like a big granola.0
