Meat or Chicken recipes for picky eater :(
I'm trying to cook dinner for myself and my super picky boyfriend. I love everything and he hates everything. So far it has been every man for himself when it comes to dinner - because if it wasn't I would be eating a cheeseburger for every meal (hello MFP!). I need any suggestions on recipes for a picky eater - the only vegetables he eats are corn and peas. Absolutely no tomatoes or broccoli. We love ground turkey and anything with chicken. Help!!!!!

Ugh. A lot of men are like that. Sadly, colon cancer is on the rise, particularly in me.. I think it's 'cause they won't eat their veggies. It's sad really.
But I digress...ideas for chicken and turkey (ground or not):
Sloppy Joes (you can have yours on whole grain bread or whatever you like)
Chili (also a great way to sneak in some chopped up veggies - bell peppers, onion, celery, etc.)
Fajitas with lots of toppings to choose from - he can top it his way, and you top yours your way
Non-meat food: Pizza - You can each have the crust you like and top it the way you want it
Barbecued - always yummy - and men love things cooked over flames
Pasta with ground turkey meatballs
Pulled chicken sandwiches with side salad for you ...like pulled pork, but make with chicken
Shepherd's pie with ground turkey..you can load your half with veggies
Turkey burgers (add some healthy fats so it's not dry) Or chicken breast burgers! Grilled or seared and topped any way you want it0 -
Try stuffed bell pepper recipes. I don't have any handy but quite a few involve rice (a good filler) and small amounts of ground beef and cheeses. There are many diet-friendly stuffed bell pepper recipes around too.0

Oven-fried chicken. I adapted my regular recipe to use healthy fats and be gluten-free, and was amazed at how good it tastes.
For 4 large thighs, or 2 drumsticks and 2 thighs.
In 425F oven, melt 2 Tbsp coconut oil and 2 Tbsp butter in 9x9" pan. Don't let it burn.
In a bowl, mix together 3-4 Tbsp coconut flour, salt, pepper, garlic powder, and onion powder to taste.
Coat the chicken pieces in the flour-spices mixture.
Place the chicken pieces skin-side down in the hot fat. Don't crowd the pan or the chicken doesn't get as crispy. Bake for 30 minutes. Turn pieces skin-side up, bake for additional 30 minutes. Remove from the pan as soon as it comes out of the oven. Good fresh from the oven or cold later.
The original recipe uses white flour and shortening instead of the coconut flour and oil. Olive oil would probably also work, but I haven't tried it. For more pieces, use a 9x13 pan and double the rest of the ingredients.0 -
Braised Pork Shoulder Pieces or Boneless Country-Style Pork "Ribs" .
I used 5 medium serving-sized pieces of meat (maybe 1 lb. total?) and half an onion.
Season with salt, pepper, garlic powder, onion powder, and marjoram. Brown meat on all sides in fat and remove from pan. Saute half a large sliced onion in same fat. Deglaze pan with 1/4 cup red wine, water, or broth, if browning in a skillet. Arrange onions on the bottom and meat on top in covered oven-proof casserole or enameled cast iron dutch oven (preferred). Meat should cover most of the bottom of the dish; don't use too large a casserole. Pour in the deglazing liquid and enough chicken or beef stock to almost cover (1-1 1/2 cup). Bake at 250F for 3-4 hours (I did 4 hours, and it was perfect) until meat is tender. Degrease the liquid and use as is for sauce, reduce if desired, or make gravy. If not using for sauce, reserve liquid for use in soup, gravy, etc. Could also probably use crockpot set on low for all day (8 hours).0 -
